Notes on the Share
This is our final week of CSA for the 2012 season. If you want to make this week's share last you into the holiday season, you're in luck! They can all be stored well under the correct conditions. The Beets, Cabbage and Carrots can be stored in the fridge in a plastic bag for about a month. The Potatoes can be stored in a cool, dark place (not in the fridge) and the Sweet Potatoes should be kept in a cool (not cold) dark place.
News From the Farm
We've come to the end of another growing season here on the East End of Long Island. Overall, it was good season for us. The warm, dry summer was just what our crops needed, and we lost very little to disease (like in past rainy years). We want to thank you for your membership this season and we hope you will join us again in 2013. We will be sending out a notice as soon as our renewal application is available on our website in the next few weeks. Have a very happy and healthy Holiday Season! - Maggie, Matt, James & Galen

Our annual Thanksgiving box includes Potatoes (excellent varieties for mashing), Rutabaga (also delicious mashed), Carrots to roast (see receipe below), Sweet Potatoes to mash or roast, but also yummy in a pie (see recipe below). Broccoli, Romanesco Broccoli, and Cauliflower are great just lightly steamed, and Radicchio or Savoy Cabbage would be perfect raw in a salad.

Notes on the Share
Leeks are delicious in soups or braised on their own (see recipe below). Watermelon Radish can be sliced raw in a salad or roasted to bring out their meaty flavor. Green Kale is great in hearty fall soups, Russet Potatoes are the perfect variety to bake in the oven, and Cabbage and Broccoli are stars of the fall harvest. Finallly, tender Baby Carrots to snack on raw or roasted in the oven to bring out their sweetness.
News From the Farm
Our work is slowing down now that the season's end is in sight. There are still a lot of storage crops to harvest for the winter shares, including carrots, beets, rutabaga and endive. A soon as a crop is harvested, we're clearing the fields and planting cover crops. These will reduce erosion over the winter and fix nitrogen in the soil so the fields will be in excellent shape for planting into next spring.

A lovely fall box of produce this week. We tried to include many items which don't need to be cooked, just in case you're still without electricity or cooking facilities. The sweet potatoes will store, but they should not be left outside in cold temperatures. Most other items can be left outside if you don't have electricity to keep them in your fridge.

Notes on the Share
It's a brassica bonanza! Kohlrabi, Red Kale (make this kale salad!), Guy Lon, Broccoli, Watermelon Radish (see recipe below) and Bok Choi are all members of the brassica family and grow well in the fall. Remember to keep your greens wrapped tightly in a plastic bag in the fridge so they stay fresh and hydrated. Beautiful, sweet Red Beets are delicious roasted in the oven (see recipe below), and a sack of Yellow Potatoes roast up beautifully and make yummy mashed potatoes!
News From the Farm
There's still a lot of action in the fields these days - finishing up our potato harvest and seeding cover crops. Our cover crops are seeded on empty fields (after our vegetable crops are harvested) to protect and enrich the soil throughout the winter and into late spring. Some of the varieties we plant include hairy vetch, rye, triticale, oats, crimson clover, and red clover. Next week we will begin our massive storage crop harvest for the winter shares, which include storage varieties of carrots, beets, turnips, rutabaga, kohlrabi and watermelon radish.

Bonus! Garlic seconds - 1 or 2 small pieces. Some garlic is missing a clove or two. We are using up the slightly damaged garlic which still has many good quality cloves. The brown discoloration on some of the cloves is just on the surface and is cosmetic, although you may want to cut it off before using.

Notes on the Share
Kale is back! I am in heaven. Red Russian Kale for everyone this week and I highly recommend the kale salad recipe below. This variety is best enjoyed raw because of its super tender leaves and mild flavor. (If you're getting more than one kale this week, you can identify the red kale by its red stem.) Green Batavian Lettuce or Green or Toscano Kale, depending on your pick-up day and location. Green Cabbage is back for the fall too. I think I may try a cabbage soup to warm things up one night this week. (See recipe below.) Butternut Squash, which we have been roasting in chunks in the oven, but is equally delicious in a creamy soup (kids love it!). Baby Arugula for a tender salad and Cilantro! (See the Huffington Post link below for some great recipe ideas using cilantro!)

Notes on the Share
What a spectacular box of fall greens! Escarole (the frilly lettuce look-alike) is a member of the endive family, less bitter than you would expect, and can be eaten raw in a salad or cooked. The link below to Martha Stewart's primer on escarole is great for those unfamiliar with this delicious green. Mesclun Lettuce Mix and Boston Lettuce will provide you with a week's worth of delicious leaf salads. Baby Bok Choi is a favorite, braised or cooked alongside tofu in many Asian dishes. Japanese Salad Turnips can be eaten raw or cooked. We like to slice them up and sprinkle them with a little sea salt. The green tops are delicious when sauteed with garlic and olive oil. Kohlrabi may be new to many of you too! Try slicing thinly and enjoying raw, or roast them (recipe below). Toscano Kale - thank goodness this one is back for the fall! I need my daily kale fix and this variety is perfect steamed with garlic and umeboshi vinegar (my favorite way to eat it), or baked into kale chips or thrown into soups. A lovely bag of tender Arugula and a box of Baby Yukon Gold Potatoes round out the shares. Wow! I can't wait to get into the kitchen this week.

We must say "farewell" to the Tomatoes - you're getting the last ones of the season in this week's box. Green Beans will also be finished after this week. A lovely head of crisp Batavian Lettuce and a bag of tender Baby Arugula will make for some yummy salads, and a bunch of Carrots, crisp and sweet, are perfect for snacking on or roasting in the oven with some garlic and cumin seed. (Recipe below.) More Winter Squash for everyone -- and please remember to use cook it up right away. We've had some storage issues with our squash this year, so we advise you to eat them immediately. If they don't look perfect on the outside, they're usually just fine when you cut them open. And Shallots, which may be new to many of you, are a member of the onion family but with a much more mild flavor. You can substitute them for onions in recipes or try them in a classic vinaigrette where they turn creamy! (Recipe below.)

With rain in the forecast for the next few days, I'm planning on settling into my kitchen with a cup of tea and cooking! Soup is a must, and the Butternut Squash and Leeks this week will be turned into a smooth and delicate fall soup (recipe below). Former CSA member, blogger (The Wednesday Chef), and now author, Louisa Weiss, just released her first book which includes a fantastic looking tomato soup recipe (see below). I've already finished the book and passed it on, but not before making a mental note to try the soup this week with the Tomatoes that have been sitting on my windowsill. Yukon Gold Potatoes will be roasting in my oven with freshly snipped rosemary from the kitchen garden, and the Lettuce and Cherry Tomatoes will make a delicious salad. Oh yes, and another week of tender Green Beans, because you just can't get enough of them while they're fresh!
News From the Farm
Our potato harvest has been in full swing for the past couple days. We'll take a break during the rain and start up again when the fields have dried out early next week. Here are some just-dug potatoes on their way up the conveyor belt... They're dumped into a wagon, unloaded into crates and washed before being bagged up for your shares. You can't get any fresher than that!
