CSA 2014 - Week #7

NOTES ON THE SHARE

We have another great summer share this week!  Cucumbers are debuting, and I just can't get enough of them - in sticks to dip, chopped in salads, sliced up in my water pitcher and my personal favorite, tzatziki (cucumber & yogurt sauce)Try this recipe from David Lebovitz. We have some beautiful Cipollini Onions to share with you this week as well.  I'll warn you that they are sharp, so you're probably best off cooking them.  Try this week's recipe for roasted onions and you won't be disappointed! Carrots are easy to just eat raw with some hummus (my kids' choice), but they're also delicious roasted with garlic and herbs.  You could even grate them up and add them to a coleslaw along with that leftover cabbage from last week!  Kohlrabi needs to be peeled (discard the peel and the leaves/stems) and can be enjoyed either raw or cooked. We like it sliced thinly, drizzled with some good olive oil and sprinkled with sea salt and some fresh herbs.  You could add a little cheese and really do it up!  Here are some more ideas... I'm loving my summer salads, so luckily we have more Lettuce this week.   Rounding out the share is a bunch of Scallions - perfect for the grill or chopped in your salads, and more Zucchini

CSA 2014 - Week #6

NOTES ON THE SHARE

So many of you have been asking for the return of my rambling comments on the week's share.  So here you go...
Radicchio is one of my all-time favorites.  It is bitter, but easily balanced when properly dressed or cooked.  I happen to love it sliced thinly in a salad (Try this one!) or as we discovered last summer, it is perfectly suited to the grill - yes, the grill!  I've put a few recipes for grilled or seared radicchio in this newsletter for you to try, and you really must.  Zucchini is making its debut this week, also a wonderful addition to your grill when sliced lengthwise and coated with a little olive oil.  You'll be getting plenty more this season!  Swiss Chard is really best cooked, and I like to gently saute it with some butter until just tender.  Remember that the stems take a bit longer to cook, so throw them in the pan for a few minutes by themselves before you add the leaves.  If I'm feeling like making a little more of a fuss, I throw in some pine nuts and raisins a la this recipeBasil, my love, I'm so glad you're back!  Please do yourself a favor and just whip up a batch of basil pesto this week - recipe to the right.  When I was a kid my mother would make pesto in her Cuisinart several times a week in the summertime to keep up with her prolific basil patch.  It's perfect on pasta, pizza, zucchini, crackers, sandwiches, anything!  Chioggia Beets (also known as candy cane beets for their red & white striped interiors) are an Italian heirloom variety.  You can cook them up like red beets, but don't forget to slice them horizontally so you can see just how beautiful they are! Batavian Lettuce for your summer salads, a variety that grows well in the heat.  Carrots, yum!  And either Cabbage or something else that the farmers deem worthy of including in your shares this week!  A great box all around.  Thank you Farmers Matt & James!

FARM WEATHER REPORT

We were so thankful for last Friday's rain storm, but it only gave us a few days of rest from irrigating.  The fields are dry as a bone once again and we're back to moving pipes and irrigating our fields one section at a time.  We're looking forward to Mother Nature helping us out with a little more wet weather forecast for mid-week.

NEWS FROM THE FARM

It's been another busy week of transplanting, seeding, harvesting and irrigating! We seeded the second set of green beans on Sunday.  You can expect to see them in your shares some time this month.

NOTES ON THE SHARE

How can you not love this week's harvest?  I'm so excited to get into the kitchen after I finish up this newsletter and start cooking!  I'll be making the salads I put in the Recipe section of the newsletter.  The escarole and fennel salad is a little bit time consuming, but oh so worth it!  If you're in a pinch for time, save the white parts of the escarole for salad (dressed in a simple vinaigrette with olive oil, red wine vinegar, good quality mustard and crushed garlic), and cook up the green parts in a simple saute.  The recipe for escarole & pine nuts is a good one.  You can find dozens of other recipes for this week's bounty on our website.  Bon appetit!

CSA 2014 - Week #4

NEWS FROM THE FARM

One of our irrigation pumps is broken.  I won't go into all the boring details, but it's a major bummer.  No pump means no irrigating.  Crops are dry, farmers are grumpy, hours are spent trying to bust the thing apart so we can figure out what's wrong with it.  And it's been so dry that the local irrigation company can't help.  They are up to their ears in work fixing pumps from other farms in similar situations.  Just a typical week at the farm.... (I'm hoping that the replacement parts shipping from Georgia this week will get here soon and we can have water again!  And see some smiles on our farmers' faces.)

NOTES ON THE SHARE

There are some items in the box this week that may be new to many of you.  Kohlrabi (that strange-looking round veg) is crisp and juicy inside - perfect sliced raw and sprinkled with a little sea salt or cooked.  Remove the stem and greens and peel off the skin to get to the good part!  The NY Times had a nice article on it a few years ago. And this is the first time we've had Napa Cabbage in the share!  Thank you Farmer James! This is a really crisp mild-flavored Chinese cabbage that is perfect as the base of a refreshing summer salad. 

U-PICK STRAWBERRIES

Our U-Pick season is over...  We're planting more strawberries for harvest next June, so we'll have plenty more next year!

CSA 2014 - Week #3

June 17, 18, 19 & 20

NEWS FROM THE FARM

We're still in "greens galore" season and the CSA box is brimming with leafy goodness this week, so I hope you're able to keep up!  One tip I can offer you is to wash your greens ahead of time and pack them back inside clean plastic bags in the fridge with a lining of paper towels to absorb excess moisture.  Then when you're ready to prep your salad (or make spinach lasagna as I did last night) all you have to do is pull out your washed greens and you're ready to go! 

CSA STRAWBERRY UPDATE

Our goal is to send out a quart of strawberries to every CSA member some time during this month. Picking strawberries is very time consuming for us, so if you do receive strawberries in your share this week, we may not have had time to pick another item on the list below.  Please be assured that we keep track of what each member group receives in a given week and we do our very best to make sure that if you don't receive an item one week you will receive it another week. 

U-PICK STRAWBERRIES

We will be open this coming Friday and Saturday, June 20 & 21. Please note that our hours are 10am-6pm on Fridays and 9am-5pm on Saturdays. Closed Sunday-Thursday.  We are monitoring the crop daily and we'll post a crop status update on our website and Facebook page, so please check there before heading out to the farm.  (We do get very crowded on Saturdays, so your best bet is to come on Fridays or right when we open at 9am on Saturday to avoid the crowds!)

Finally, some warmer weather as we approach the official start of summer!  Our hot weather crops like tomatoes, peppers and eggplants are going to be delayed because of the unusually cold start to the season. We hope that more hot sunny weather like we're experiencing this week will help them to really start growing.

*The scape is the top of the garlic plant-- a delicacy you only get to savor for a few weeks each June, so enjoy! Remove the top head (the bulbous lighter part). The rest is edible. It has a distinct garlic flavor, but it is certainly milder than the cloves. are the top of the garlic plant.

CSA 2014 - Week #2

June 10, 11, 12 & 13

More beautiful early season greens in the share this week!  I'm loving these gorgeous heads of lettuce - the Romaine for crunchy Caesar salads and the buttery leaves of the Boston gently dressed in a light vinaigrette.  We've harvested the next planting of red kale in its baby form, so it's perfect raw in salads.  The plants grew faster than expected, so the red stems are a bit too long.  Just snap off the stems and discard - they're too tough to eat.  Also in the share this week is one of the most beautiful crops we grow...rainbow chard!  You can eat the stems of these, of course, but they do need to cook for a bit longer than the leaves.  I usually chop up the stems and throw them in my pan for a few minutes before adding the leaves.  Try the recipe below -- it's a family favorite! 

And finally, cilantro!  I happen to LOVE cilantro, but I know that not everyone is a huge fan.  Here are some ideas to use it in your cooking this week! 
Salads - I throw in a handful of leaves (not stems) in our salads for added flavor.
Guacamole - A must ingredient for truly delicious, authentic guacamole!
Black Beans - Add a handful to your pot of black beans.  It infuses it with wonderful flavor! 
Chicken Soup - A terrific version with lots of garlic and cilantro! Try this recipe.
Grilled Halloumi with Lemon, Capers & Cilantro  - Try my recipe below! 

CSA STRAWBERRY UPDATE

Our strawberry crop is coming in, but it's been too wet to harvest for the CSA.  Unfortunately, it looks like this week is going to be wet through Friday, so we probably won't be able to send out any berries until next week.  We can't harvest them when there is any moisture in the air because they will start to rot immediately.  As soon as we get a dry window, we will harvest them and send them out to our groups in batches.  We aim to get them out to every member at some point during this month! 

U-PICK STRAWBERRIES

CSA 2014 - Week #1

June 3, 4 & 5

Welcome to the first week of the CSA!  We have a wonderful harvest of greens in this first week's share.  They are especially tender this time of year, so be sure to handle them carefully!  I know I'll be serving up some wonderful kale and spinach salads this week.  Try the kale salad recipe below - it's the best! 

STRAWBERRY UPDATE

We know that many of you are anxious for our U-Pick Strawberry season to begin.  We are monitoring the crop daily and we'll post a notice on our website and Facebook page when we are confident that there will be enough to open up the fields to pickers!  By next weekend there will be plenty, so you can confidently make plans to come visit us and U-Pick on Friday and Saturday June 13 & 14 and the following week, June 20 & 21.  Hours are 10am-6pm on Fridays and 9am-5pm on Saturdays. 

And yes, we have a separate field of strawberries planted for the CSA, so you should receive strawberries in your CSA share at some point this month.

GET TO KNOW US!

Some of you know us well, others are new to our CSA program and new to our farm.  Here's a little background... My husband, Matt Kurek, started the Golden Earthworm Farm nearly 20 years ago on a small piece of rented land near his family's home.  A self-taught farmer, Matt grew the farm from that one acre plot into one of the first organic CSA farms in the country.  We now grow on 80 acres of Certified Organic farmland and serve dozens of communities on Long Island and Queens with our beautiful organic produce.  Farmer Matt and farmer James Russo, who joined us as a partner in the business in 2005, are the incredibly hard working farmers responsible for growing the produce you receive in your shares.  We also have a team of dedicated and hard working employees who maintain and harvest the crops and wash and pack up your share each week.  Many of them have worked for us for over a decade.  I have always been the one behind the scenes designing our website, taking the photographs, developing recipes and running the business end of things.  I'm constantly running (or biking) between the fields, the farm office and our farmhouse kitchen.  Matt and I live on the farm with our two little farmers-in-training, Galen and Zinn.  It's a busy, dirty!, beautiful life.  We are so happy you have joined us this season!  Please don't be a stranger - come visit us or drop us an e-mail.  We love to hear from you!  - Maggie

FARM WEATHER REPORT

Farmers love to talk about weather.  And why not?  It is the single most important thing in their lives. (Ahem, after their family, of course!)  It is the main factor in determining the success of a crop, the timing of a planting and the outcome of a harvest. In other words, not only is it important to your farmers, it is going to be very important to you this year too!  The weather will determine what gets harvested and packed into your CSA box, and what you will ultimately be serving up on your table this season.  So, how is the weather on the farm?  Well, this spring has been unusually cold, as I'm sure you know all too well.  Fortunately, this didn't keep us from our usual seeding schedule in the greenhouses where we start many of our crops.  It did delay our strawberry crop, which is now about 2 weeks behind schedule.  They're starting to ripen, but slowly.  They should reach their peak by mid-June.

THIS WEEK IN THE SHARES

Mustard Greens Braising Mix - 3/4 lb.
This is a lovely mix of mustard greens delicious in a salad, or like we suggest by the name, braised gently.
Baby Lettuce Mix - 3/4 lb.
Radishes OR Turnips - 1 bunch
Radishes require no explanation.  If you're new to these Japanese white salad turnips, you should know that they are best eaten raw (no peeling needed).  The tops are also edible gently steamed or sauteed.

STORAGE

All of the bagged greens can be stored in the fridge for several days.  Do not wash until you are ready to use them.  The turnips or radishes should have their tops (greens) removed before storing in an air-tight bag. They'll last longer that way!

News from the farm

Happy Thanksgiving!  The final delivery of the season is finally here.  (Thursday sites will receive theirs next week.)  Now it's time to put the farm to bed and enjoy a restful off-season. As the farmer's wife, I like to joke that my husband is married to both me and the farm...and it certainly feels like that during the growing season!  I look forward to this time of year when we can spend quality time together as a family.  Our two little ones are growing up so quickly and Galen has really taken to his role as "Little Farmer" this season, driving the tractor (with his daddy), washing veggies and even packing the CSA boxes!  (He loves it and begs to stay at the farm well past dinnertime when we drag him home...)  Zinn is just starting to take his first steps, so I'm sure he'll be tottering around in the warm greenhouses this winter. 

Matthew and I have so much to be thankful for this year - most importantly for our happy and healthy family, but also for the wonderful CSA community that supports our farm.  It's a funny model, this CSA thing... You're asked to put your trust in a farmer who you may have never met, sending in your hard-earned money months before you ever see a vegetable.  But it's this model of trust between farmer and member that has allowed our farm to grow.  We feel that there is nothing more important than the health of our families, our communities and our planet, and your support of our farm goes towards strengthening all of these.

A great box of end-of-season goodies including the amazing watermelon radish!  It's great roasted in the oven or sliced thinly in a salad.

And mache is a special French salad green that has a lovely delicate texture and mild flavor.  Wash gently and toss with a light vinaigrette.  Here's a fun piece NPR did on mache a few years back.  Bon appetit!

It may be beautiful, but it's not nice weather for working in fields.  As the season comes to a close, it's less comfortable for our workers picking and washing the veg in these cold temperatures.  They deserve a big thank you for their hard work all season, and especially now as they work through the snow and wind and freezing wash waters. 

Our winter shares are almost sold out, so be sure to sign up in the next few days if you want to snag one!   

WINTER SHARES

We are now accepting applications for our Winter CSA.  The program consists of 5 deliveries from December through March (every 3 weeks) with pick-ups at the farm in Jamesport, and in Manhasset and Port Washington.  Our locations for pick-up are limited during the winter since the produce needs to be kept indoors where it won't freeze!  LEARN MORE HERE.

In a bag in the fridge: Kale, Lettuce Mix, Bok Choi, Broccoli, Clauliflower, Peppers

In a cool (but not cold), dry place: Sweet Potatoes

News from the farm

Did I promise the end of the peppers last week?  I think I did, but the pepper plants had other plans.  So here, fully into the first week of November, we present you with 4 more peppers!  It's amazing, really.  And more of the wonderful brassicas you all loved last week....and a nice quart of sweet potatoes for roasting in your oven on a cold night. 

We expected a freeze here on Sunday night, but were pleasantly surprised when it didn't happen!  We lose our tender crops in a freeze, so luckily we may have a little more time to harvest them before another freeze warning comes our way.  (Our cold weather crops can be harvested through mid-December despite freezing temps!)
