About the variety…Northern Spy apples are a large, tart, and juicy apple variety known for being excellent for baking, with the saying "spys for pies" highlighting their popularity in cooking. They have crisp, white flesh, a thin skin, and a mix of red and green coloring, and are also good for fresh eating!
